Cheesecake Tarts

This whole month, I have shared ideas for an adorable, strawberry themed wedding shower. This series continues today with this tasty, cheesecake tart recipe! These precious, little desserts are perfect for any themed shower, but they are particularly tasty with a side of fresh strawberries. Make sure to visit the rest of this series for more ideas!

Ingredients

Pillsbury Pie Crust

8 oz Cream Cheese (softened)

1/4 Cup Sugar

2 Tbsp Heavy Cream

1/4 tsp salt

1/2 tsp Vanilla Extract

1 Egg

Fresh Strawberries and Mint (danish)

Powdered Sugar (for dusting)

 

Directions

Preheat oven to 350 degrees.

Grease a muffin pan.  Cut out circles from the dough (I just used the rim of a plastic cup) to fit inside the cups of your muffin pan. Make sure the circles are large enough to create a rim around the tart to hold the cheesecake filling.

Bake the dough for about 20 minutes.

While the dough is baking, beat the cream cheese until smooth. Mix in the salt, sugar, and vanilla, followed by the heavy cream. Next, mix in egg and beat to combine.

Remove crust from oven and reduce oven temperature to 325 degrees.

Spoon cream cheese mixture into cups of baked dough. Fill to right below the rim of the pastry.

Bake another 20 minutes, or until center is set.

Let cool and refrigerate to chill completely. Sprinkle with powdered sugar and top with sliced strawberry or mint leaf before serving. Store left overs in fridge.
