Wedding Cakes in Knoxville

It was such an honor to interview Knoxville wedding cake baker, Connie, of Sugarbuzz Bakers! Connie has been baking ever since she was a little girl and now she has become a well-known cake designer for Knoxville weddings! Her designs range from simple and classic to intricate and extravagant. She says her goal is to simply make her brides happy by taking their vision and making it a reality. Tell me how your passion for cakes started?

It started in my kitchen with my mom when I was a little girl. She always baked dessert for dinner, and I learned to bake by helping! On a whim, I bought my sister a cake decorating course for her birthday. We went together, and I completely fell in love with the whole process! I studied everything I could find about it. I started creating cakes for friends and family, and people started asking me to make cakes for weddings and other events. It grew into a business from there!

What is your favorite part about working with brides?

I just love the whole creative process of making the bride’s ideas become a reality. When brides come for a consultation and tasting, I ask them to bring any inspiration for their wedding such as photos and Pinterest boards. I sketch out every detail of their wedding cake on graph paper to make sure we are on the same page. For the tasting, we usually serve three different flavors of cake, then I put a variety of frosting flavors on the naked cake for them to try. It’s all a lot of fun!

What is your favorite part about the planning process?

It is so much fun when brides bring me new ideas that I have never seen before. It’s also fun to play with ideas until we discover exactly what she has envisioned. Sometimes a bride has a photo of something she wants to recreate, which is also a lot of fun. In general, I really enjoy the planning process and getting to know the couple through those initial meetings.

What makes you unique?

We are an artesian baker which means everything is made from scratch. Our philosophy here is we simply want to make people happy. It’s not so much about the money or creating something over the top for every wedding, it’s more about designing what the customer wants and giving them the best experience possible from beginning to end.

How would you describe your style?

My style is clean and elegant. I’m also a big sucker for details. I seek originality with each design, so it’s especially fun when I get to create something for a bride that is not seen anywhere else.

What inspires your designs?

Anything in nature is very inspiring, especially flowers and butterflies. I especially love making sugar flowers until my hands can’t do it anymore! For some reason, it’s just so relaxing.

I also am inspired by fashion and jewelry that is very glamorous and detailed.

Tell me about the most interesting design/flavor you’ve been requested to do.

One of my most fun experiences was the first Indian wedding cake I ever made. The bride actually invited me to her wedding since I had never been to one before!  I was amazed at all of the color and details!

What do you offer other than cakes?

I am best known for my Parisian macaroons. We create them in any color scheme with a variety of fillings. I also make cookies, cupcakes, truffles, fruit tarts, pies, and single serving cakes.

What do you love the most about creating weddings cakes.

I love them best because you can go big and dramatic and it’s ok! The cake makes such a statement at the wedding, and it’s ok to make it the center of attention. It’s just so fun from beginning to end! Sometimes brides will send me pictures from their wedding along with lots of love and thanks. I’ve even seen a few brides cry when they see their cake! It’s reactions like that that make my job so rewarding.

Tell me how you make a groom’s cake fun and sentimental.

The groom’s cake usually reflects the groom’s personality, hobby, or career. We’ve done everything from a grill with meat on it, to a hunting themed cake that says, “the hunt is over!” Other themes include Star Wars, Xbox, i-phones, scooba diving… I could go on and on!
